The Split restaurant scene's culinary revolution is a recent phenomenon and one that's still booming. A few exotic restaurants do exist but the best restaurants do what they do best: grilled fresh fish, stewed meat, homemade pasta and fluffy pizza. This year, two new Michelin stars have been awarded, as well, Croatia has 55 Michelin recommended restaurants and 4 Bib Gourmand recommendations – an acknowledgment of quality menus at affordable prices. However, even though there are no Split Michelin Star restaurants, Michelin did provide recommendations for five restaurants in Split: Konoba Fetivi, Zrno Soli, Zoi, Restoran Dvor Split and Kadena. Another Split institution, Kadena has been a favourite of locals for years and was perhaps one of the more experimental restaurants in its time, before the food scene really boomed in Split. An authentically-Dalmatian gem, Konoba Fetivi is an informal dining experience that places the region's bountiful ingredients centre stage and presents them unfussily and respectfully. The little grilled sausages – made from a mixture of beef and pork – are stuffed into pillowy somun bread along with raw onions and then slathered with a pepper sauce, called ajvar. Wholly dependent on the season and what's been caught, the seafood menu alters by the day (as do individual dishes such as the shared seafood platter). Don’t be put-off by the no-frills street vendor kiosk; their meat – pork, lamb, turkey and chicken – is grilled to perfection.
